Today I will be showing you how to make Sauce Entrecôte! 🇫🇷This is my version of this famous tasty sauce. I first came across it many years ago in a Relais de l’Entrecôte in Bordeaux and have since had the opportunity to go to a couple of their restaurants in London. If you like steak frites, served with a wonderful sauce, I recommend you give it a try! I like to eat it with fries and a green salad and of course, served with a nice glass of red - a Côtes du Rhône would be perfect! Voila! Bon appétit!Ingredients:-(Serves 2)Butter x 150gShallot x 1 medium, choppedFresh herbs:Basil x 4 leaves Parsley x 4 stemsTarragon x 4 stemsSage x 2 leavesWorcestershire sauce x 2 teaspoonsDijon mustard x 1 teaspoonEgg yolk x 1Nutmeg x a little gratedWalnuts x 5-6Anchovies x 4-5Capers x 1 teaspoonJuice of 1/4 lemonSalt x pinchBlack pepper x few grindsIn a pan, over a medium heat, sweat the shallots in 30g of the butter for approx 5 minutes. Then into a food mixer, add the rest of the butter, the shallots mixture, all the herbs, the grated nutmeg, the walnuts, capers and anchovies and blitz until well mixed and you have a nice paste type consistency.In a separate bowl add the egg yolk, mustard, lemon juice and Worcestershire sauce - whisk well. In a pan put 2/3rd of the paste mixture and the egg mixture and heat over a low/medium heat, stirring continuously - do not boil. Heat for approx 6-7 minutes or until the sauce is nice and hot and has thickened.Add the hot sauce mixture to the remaining 1/3 of the paste - stir well and voila - ready to serve!Can be kept hot in a thermos flask until steak and frites are ready!Voila!
