It's just hard not to see some attitudes towards service jobs as stuck in a mindset where a waitress was a woman who had failed to find a breadwinner husband and thus inferior to the wives of such men and doubly inferior to any man. And that person is going to find the service economy terrifying.

I think the key divide here a vision of the service economy as "I do services for you and you do services for me" vs. "service workers are low-class servants I can boss around." For the latter, the expanding service economy represents a gendered threat as the jobs are often female-coded.
