Very pleased with the roasted red pepper and tomato soup I just made 🤤
2 red peppers deseeded & cut up, one red onion & 2 large garlic cloves all roasted w/ olive oil at 200°C for 30mins. Add to pan with a 400g tin of plum tomatoes, veg stock cube, tins worth of water, basil, blend, s&p to taste
