In meat processing terms, "skeletal meat" is the stuff that sticks close to the bone which is marginal for the average consumer (unless you're making broth) but can be boiled off and salvaged (into cold cuts, hot dogs, Spam, etc) on an industrial level. I live for the retrotrash equivalent of it.
