Pork butt, ideally bone-in (esp if you snag it for like $2/lb). Entire head of garlic; peel and mash with 1T salt. 1 cup orange juice, 1 cup lime juice. Black pepper, oregano, and cumin to taste (usually about a teaspoon each for me). Marinate as long as food safety allows; slow cook.
