Went to the food markets today for fish. Skate wings were $6.99/kg - bargain! Got home, realised I didn't know what to do with it. YouTube had UK vids mostly. I then realised that, as with most Australian critters, our skate is somewhat bigger. And tougher. Nothing a sharp knife couldn't deal with 😄
