Prepping a pork butt to make carnitas today. Pork is trimmed, cut into 2 inch pieces and salted. This will sit for an hour and I’ll prepare my bath of lard where the carnitas will go in a 300 degree oven for 2-1/2 hours. Easy and ready for tacos tonight.🍽️🌮🐖☮️

Why did nobody tell me how easy it is to make cultured butter? Cream and buttermilk on the counter for about 16 hours until thick. A minute with an electric mixer. Rinse and knead in cold water. Mix in a bit of salt. Incredible tasting butter. So little work for something that tastes amazing! 🍜🍽️

It always feels like the end of an era when a rat over 3 years old passes. I'm so grateful she lived such a long, spirited life. She was so sweet and gave tiny kisses and took care of the other rats. I had her since she was like 4 or 5 weeks old.
