Dear people who write cooking instructions for hams: It is NEVER "12-15 minutes per pound". At 275° F, it is more like 25-30 minutes per pound to hit 140° F internal. I forget this every time, refer to that cooking guidance, and throw off my entire meal prep timing by multiple hours. Get better.
