Also, while alien makeup has been getting more elaborate in modern Trek (for better and worse IMO), not every actor is Doug Jones and so it helps for them to be at least somewhat human to be relatable. 'Measure of a Man' would not be improved if Data looked like C-3PO.

The counterpoint to this is that Star Trek aliens have far more cultural depth. There are some examples of this in Star Wars, but mostly the aliens are sidekicks or background characters. Which is fine of course. Different franchises, different goals.
