The United States has the highest GDP in the world by *ten trillion dollars*. It's not even close. Americans should retire at 60 w/ full pension. We should have free universal healthcare. We should have free PreK-PhD education. This belt-tightening ideology is a neurotoxin limiting our potential.

That’s why I propose in the podcast setting up a large legal defense project …. Would require a lot of pro bono legal work and and funding. But I think it can be done. More lawyers need to get onto defending the rule of law.

Depends, what temp is the bird, is your oven properly calibrated. The question should be what temp? Get a thermometer and cook until 157.

Dry brine yes, just salt and pepper keep it uncovered in the refrigerator 2-3 days max. I cook my bird at a low temp 225 cook to about 157 . Remove from oven and raise the temp to 500 put the bird back in for 5-10. Let rest for 30 min before carving.
