I've been trying to develop a local-AI hardware setup that clients can copy but there's a serious problem with top-shelf hardware availability worldwide. I just shifted from local-AI to private-AI using VPS rented compute and Trusted Execution Environments to prove that data hasn't touched cloud.

Since you're constantly throwing away whole chunks of code and apps, I think the secret to coding with AI successfully is to apply functional programming practices where the data is primary and the code is divided into small chunks that perform specific actions on the data.
