I still remember that school workshop, where each of us brought one ingredient and together we created this delicious dessert. We had to wait a couple of hours to enjoy it as it needed to set, and I think it was even better than expected, due to the fact that we had made it.
The biscuit salami is a popular dessert in Romania, mostly homemade. It’s never as good when you buy it. And to be fair, nobody really buys it because it is such an easy to make recipe. You won’t find salam de biscuiti in restaurants, so, if you want to taste it, you’d better save this recipe.
Also known as chocolate salami, this is a no-bake dessert, with biscuits, cocoa, raisins, Turkish delight, walnuts, and the unmissable rum essence, which is specific to the traditional Romanian desserts.

## **The Ingredients for the Romanian Biscuit Salami Recipe**
The main ingredients for this Romanian biscuit salami recipe are the Petit Beurre biscuits, which is a buttery type of biscuit, with a strong texture. Don’t use digestive biscuits, as they will turn into a mush once you mix all the ingredients together. The Petit Beurre biscuits are easy to find in any supermarket, in the UK being sold under the “Lu” brand in all major supermarkets – make sure to buy the original version, and not the one with salt. Any other butter biscuits brand works as well.
Besides the biscuits, this recipe also requires butter, milk, sugar, cocoa powder, and rum essence (or straightforward rum, if this cake is eaten by adults only as it will be boozy). The rest of the ingredients depend on your taste. I love my biscuit salami to be loaded, so I add everything: walnuts, Turkish delight, raisins, and coconut. On this occasion, I made this dessert as a treat for our weekly pub quiz evening. Because some of my friends have dietary requirements, I used plant based butter and lactose free milk, making this biscuit salami recipe vegan. I am happy to say that the taste remained the same.
## **How to Make the Romanian Chocolate Salami**
The first step in making this Romanian biscuit salami recipe is breaking the biscuits into small bite size pieces. The best way to do this is by hand. Just break them into smallish pieces them one by one, using your hands. They don’t have to be all the same size, so don’t worry about this, but make sure they are not too small (not like a cheesecake), as they will become mushy in the mix. The biscuits provide texture and crunch to this dessert.
Next, heat up the milk and add the soft butter. The butter has to be at room temperature, to dissolve easily in the milk. Then, add the sugar and mix until it melts in the liquid. Add the cocoa and mix continuously to incorporate it into the composition. By this time, you will notice that the liquid has started to boil. Turn off the heat and add the raisins and the rum essence or rum, then leave it to cool down for 5-10 minutes.
Meanwhile, add the biscuit pieces to a big bowl, together with the walnuts and the Turkish delight. Once the liquid mix has cooled a little bit, pour it over, and start mixing gently, to avoid crushing the biscuits. At the beginning it may look like there is not enough liquid, but it is. Continue mixing until all the biscuits are coated with the cocoa mix.
Let the biscuit salami rest for about 10 minutes, so that all the liquid is absorbed.
Meanwhile, roll out a sheet of cling film on the table, and sprinkle it with coconut flakes. I ran out of cling film and used aluminium foil, which is harder to work with, so I wouldn’t recommend using it.
After 10 minutes have passed, start adding the biscuits composition onto the cling film, trying to form a log. The quantity below is enough for two biscuit salamis. You can use your hands to help form the log shape. Once it looks like a salami, sprinkle some more coconut flakes on top, roll the cling film several times and seal it at the ends. Holding the extra cling film at both sides, roll it on the table until it becomes a pretty roll.
Put the rolls in the fridge for a minimum of two hours, better three or four. The biscuit salami will bind as it chills.
To serve, take the salami out of the cling film, and cut it in one centimetre thick slices.

* You can make this recipe of Romanian biscuit salami vegan by replacing the butter with a plant based option, and the milk with a nut based alternative.
* Don’t let your impatience get the better of you, let the biscuit salami cool down for at least two hours in the fridge, before cutting it, its worth the wait.
* You can customise the ingredients to your liking. The only ingredients that you shouldn’t eliminate are the biscuits and the walnuts. And the rum, it wouldn’t be the same without it. I also love the Turkish delight and won’t remove it, I think it gives such a nice texture and taste to this biscuit salami recipe. You can also add other dried fruits, or different types of nuts, or even chocolate .
* If you are making this biscuit salami for adults only, feel free to add rum instead of rum essence.

### Ingredients
* 350 gr Petite Beurre biscuits
* 200 ml milk or plant based milk
* 150 gr butter or plant based butter, at room temperature
* 100 gr sugar
* 2 tbsp cocoa high quality
* 100 gr raisins
* 100 gr Turkish delight cut small
* 100 gr walnuts chopped
* 2 tsp rum essence or rum for an adults only dessert
* 2 tbsp coconut flakes
### Instructions
* Break the biscuits by hand, into bite size pieces.
* Heat the milk in a pan, and add the soft butter over. Mix it well until the butter melts.
* Add the sugar, and mix until it dissolves.
* Add the cocoa and incorporate into the mix.
* Turn the heat off and add the raisins and the rum or rum essence.
* Let it cool for 5-10 minutes.
* Meanwhile, add the biscuits, Turkish delight and walnuts in a big bowl.
* When the liquid composition has cooled down, pour it over the biscuits and mix gently, to incorporate all the ingredients.
* Set aside for 10 minutes.
* Meanwhile, spread cling film on the table and sprinkle coconut flakes on top.
* When the 10 minutes have passed, start adding the biscuits composition on the cling film, over the coconut, to form a log.
* Shape the log, tapping it gently with your hands. Form it to resemble a log.
* Sprinkle some more coconut flakes on top, then roll it inside the cling film several times.
* Seal at the ends and roll, holding each end, until you obtain a pretty salami shape.
* You will be able to make two salami biscuits rolls from the quantity in this recipe.
* Put in the fridge and let it set for at least two hours.
* Once it’s ready, slice in one centimetre thick slices and enjoy.
