For Xmas Eve I spatchcocked a turkey and I’m brining for 24 hours in buttermilk. Then into the fridge uncovered for 2 days to cure/dry the skin Used the backbone, neck and giblets for the stock. Gravy will be happening and I’ll use the turkey fat that rises to the surface to make the roux.
