1 more class to go! I am teaching 4 classes this semester (partially against my will! Haha), in addition to a full time job and waitressing on the weekends and an on-call crisis response job. I really like all my jobs, but never again. Four classes is too much. I can’t believe I’ve almost made it.

Long day. Multiple crisis responses within the last 2 days. Heavy stuff. So decorated my Christmas tree with my kiddo, and she got the batteries in the wreath outside and the lights connected to the extension cord. And ate delicious Thai food (yay Budsi’s!). It ended as a good day.

I have a full time job. And I’m also teaching 4 classes this semester. And also I’ve worked every single night at the restaurant this week since Tuesday. I am so tired. But came home from work and showered and made tortellini with tomatoes, basil, prosciutto and Romano cheese and it was so good!

Did I *need* a 2nd biscuit tonight? Absolutely not. But will it be as good tomorrow? Also absolutely not. Life is short. Eat the 2nd biscuit. (Also, not that anyone has to earn food but also I worked a 280 person buyout at the restaurant tonight and ran my ass off…a 2nd biscuit is fine.)

They’re still busy here and the food is amazing, swing by!

Sopa de mariscos from Tia Maria’s for lunch… boy am I pleased! I love their chicken soup but this is my first time having their seafood soup, it’s awesome! They have the front door locked so you have to ring a bell to get in, which makes good sense…go support them!

One of my advisees just defended her primary and secondary projects for her Doctorate in Social Work. She nailed it! She researched cultural humility among English speaking therapists working with Latino/a/x populations. Quite timely! I’m so proud of her.There is hope for the future in this moment.

Devastated to report that I have read the nutrition label, and unfortunately peanut M&Ms only offer 3 g of protein for serving (about 12 m&ms, so let’s be honest, I was getting 6g!). So I guess that delusion has been dashed. However I can confidently report that they are still delicious.

Well, my sweet potato rolls didn’t rise for nothing during the 1st or 2nd proofing… so I didn’t have high hopes. But I just baked them and ate one warm with honey butter, and oh, man! They’re delicious!

I started my day with my cold brew coffee mixed with a chocolate fairlife protein shake (it tastes like a fancy mocha!), then also had 3 handfuls of peanut m&ms… that’s just more protein, right???😁💪

We had a great fundraiser today! I was freezing bc I have Southern blood, but it was a gorgeous fall day at the Clamfest! If anyone would like to support our scholarship fund, we give out a yearly $3500 award to a student from my hometown who will be in a field that will impact the life of a child.

I just got to call a 1st year college student (studying nursing) and tell her that she was chosen as the recipient of my sister’s memorial scholarship this year for $3500. I’m going to be riding this high for a while. She’s one of 6 kids in a single income family. I’m so happy we chose her!
