Sunday dinner. We've gone back to the Rotisserie, with a @smokeycarter.bsky.social Texas Ranch flavoured chicken cooked on the SNS Kamado with a chunk of cherry wood.

Pizza night yesterday. A pizza oven is such a good investment. The pizzas require such little effort, but the results are fantastic

Using up left overs. Chips with Bacon Dust, cheese sauce, @smokeycarter.bsky.social Lemon SPG fried chicken, South Carolina rubbed Pulled Pork from New Year, mayo, tater tots and Coney Hot Sauce.

Fried chicken time. We made a coating following Kenjis crispy chicken method and added @smokeycarter.bsky.social Lemon SPG rub for flavour. It's a great combo. Then added a hash brown, two onion rings, cheese and lettuce

We served up a brisket for new year. Rubbed with @smokeycarter.bsky.social Gaucho Steakhouse rub before being cooked on the SNS Kamado.

Spent the day in Cambridge. It still sucks and the people are awful there. Went to Popeye's for the first time, I was impressed for fast food. Very crispy chicken

We made @jameshoffmann.bsky.social Tiramisu for Christmas and it was one of the finest we've had. Really gets the coffee level spot on.

Christmas left over pizzas are always a favourite. Pigs in blankets, with turkey and mozzarella ftw.

We had prime rib of beef for Christmas this year. I'm still not a fan of it 🤣

We're having beef as our main this year, but wanted to have some turkey too. Jointed a whole bird and removed the breasts which are now dry brining and air drying in the fridge. Then tomorrow night we'll pan fry them, add some butter and rub, then sous vide them overnight.

Comfort food before the big day. Full English Jacket Potato Cooked on the Weber GoAnywhere using the Smokerig.co.uk 100mm riser, their deflector plate and a Petromax loaf shaped Dutch oven to ramp up the cooking. Then seasoned, lashing of butter, sausage, homemade jerk bacon, cheese and beans.

Annual full strip down service of our Gaggia with Gagguino mod. All bolts switched for new .304 stainless steel with copper grease added to the threads. All o-rings replaced and lubed up with silicone grease. Scale wasn't bad at all. Upgraded the portafilter gasket for a new silicone version.

Cooked up a BBQ/Thermomix curry this evening We loosely followed the Butter Chicken Guided cook, but instead of marinading the chicken in the Tikka paste, we marinated it in @smokeycarter.bsky.social Spice Mango and Lime and BBQ'd it, adding it to the Thermomix for the final 5 minutes of cooking.

Christmas baking with the kids. These were Christmas Pudding Tiffins on the incredibly overpriced Thermomix.

Last minute home made sausage rolls as my daughter's both decided they're the only thing they'll eat in their pack lunches tomorrow

Last trip off the year to the London office, managed to squeeze in a stop off at St Pancras to see the Wicked Xmas tree

Woke up with a craving for a nice seasonal Victoria sponge. Could have bought one for £3 for spent £13 in ingredients and make my own. All in the thermomix this time

Fakeaway time again. Chips with bacon dust, topped with 16 hour slow cooked and smoked pulled pork, topped with homemade cheese sauce, a couple of tater tots and then drizzled generously with @smokeycarter.bsky.social new Juice Forsyth fruity hot sauce.

Then back home for. Square Sausage, home made jerk bacon, egg topped with cheese and then some of the amazing @smokeycarter.bsky.social Juice Forsyth hot sauce collab with Brew York brewery

Christmas lights turn on last night.

A visit to the London office was a great excuse to pop to Mei Mei for some Kaya Toast. Auntie Liz knows good Kaya Toast.

Loaded fries. Chips dusted with bacon dust, @smokeycarter.bsky.social Pitmaster pulled pork drizzle with the delicious Coney hot sauce to give it a sweet and fiery kick and topped with fried halloumi.

16 hour pulled pork on the SNS Kamado. Rubbed with @smokeycarter.bsky.social Pitmaster rub and some cherry smoke for flavour

12 hours in, the Flame Boss helped the SNS Kamado keep steady temps all night despite Storm Berts best efforts. The SNS really is a beast for fuel economy. Hopefully be ready at around lunchtime

Had one spare, so a cheeky little sausage on the side, chopped, sauces with curry ketchup and sprinkled with one of @smokeycarter.bsky.social curry powders.

Now my nuts are taken care of, time to focus on my sausage. These are The Sausagemans XXL Bratwurst, on a toasted roll, with added American cheese, some crispy onions and wrapped in foil to get them all steamed and acquainted. Then added some chives and demolished it.

Definitely hot chocolate weather

Night time BBQ season is back. Went for a classic double cheeseburger Using Gouda and American cheese all cooked on a Smokerig plancha.

Satisfy that takeaway craving. Salt & Pepper dusted crispy chicken drizzled in our Korean BBQ Sauce 👌

Leftovers from the weekend. Thinly sliced roast beef rump, rubbed in @thesmokeycarter.bsky.social wasabi and lime, smoked with oak. Rocket salad and horseradish on a freshly baked french stick.

And first cook up with it were these Piri Piri chicken and jerk bacon sandwiches. Cooked on a PK Grill using Grill Grates.

Speaking of the bacon, this was home cured for two weeks in a dry cure. Then rubbed with @thesmokeycarter jerk seasoning and left to air dry for two days, then sliced and vac packed

One from the weekend: homemade @thesmokeycarter jerk flavoured bacon, butchers sausages and local farm eggs on a roll from the local bakery.

Bringing back a classic A beef rump joint, rubbed with @thesmokeycarter Wasabi & Lime rub and cooked to the better side of medium rare Then whilst it rested, knocked up a batch of Yorkshire puddings and cooked with the tallow made from the brisket a few weeks ago Then added a spoon of horseradish

Two early morning tip runs and it's heating up already. Time for a quick walk to the park and play, before hiding under a ceiling fan for the rest of the day.
