Lessons about bread: It's pretty unhealthy. But it's a little healthier if you make your own flatbread. But it's a little less healthy (but yummy) if you shallow fry it. And it's much less healthy if you flip your shallow-friend flatbread with your bare hands.

My cholesterol is back to normal. It's puzzling that it was high, and it's puzzling it's gone down. Since my last test, I read Salt Fat Acid Heat, and I started doing shots with olive oil and sea salt.

I just read through Salt, Fat, Acid, Heat. I only cooked very casually pre-lockdown, and I learned by searching for recipes and making them. This book was really good for covering a lot of knowledge gaps like explaining emulsions, umami and other cooking terms I didn't really get before.

I read the Daughter's War, reread Blacktongue Thief and then reread Daughter's War back to back. His work is so good.

I've maintained weight for five weeks of my 100 week target. My observation is that maintaining weight is really easy when you don't eat bread, really hard when you do.
