Sunday food prep. Made chimichurri for tonight, and chimichurri vinaigrette for my lunch salads. Then made a new batch of bread crumbs to go in the freezer. I only have to make bread crumbs about every 6 months but used up the last batch last night. Then made a nice lunch (salad, corn, & chicken).

Dinner tonight is Greek Chicken Sandwiches. Chopped chicken breast cooked in a pan with onion, garlic, and spices (meal kit recipe). “Everything” sub rolls for the bread. HEB roasted red pepper hummus. Homemade tzatziki. Served with garlic-butter green beans.

I set up the trail camera in a different location a little closer to the woods and in less than 24 hours it got video of all the things: a tree squirrel, a rock squirrel, a raccoon, a ringtail, and two grey foxes. 🙀

Time to clean out the spice bin. It’s overflowing with little baggies of spices (I buy them in the bulk section, hence the little baggies, and do not have the time to clean and refill spice bottles instead of using baggies). At least half are too old. I’ll dump all of the old spices in the compost.

I have a lot of options on my list of what-to-cook-for-dinner and what happened was I just started out with a (short) list of what I already knew how to make, and then occasionally I’d try something new and if it was good I’d add it to the list of options. The meal kit service helped a lot too.

Checked the trail cam to see if anything new came by. A grey fox this time! So the trail cam has gotten video of a raccoon, a ringtail, and a grey fox. And a squirrel. All of them likely attracted by the bird feeder (but I bring it in at night now).

Ok so I got a $30 trail cam to see what’s been emptying the bird feeders at night, thinking that maybe it could be a ringtail. The first night, a raccoon showed up and checked the (empty) feeder. But I left the trail cam up and last night a ringtail came by too!

Alrighty I’m trying out a new breakfast: Greek yogurt with fruit & multi-grain granola. Protein, calcium, fiber, etc. Fast & easy. Plain Greek yogurt because it’s definitely not ultra-processed (and anyway I hate all of the non-sugar sweeteners). Fruit & granola to make it interesting and add fiber.

My bird feeder with the camera in it has been up for a couple of weeks now and I mostly only get cardinals (and sometimes a squirrel, the little fucker) but the cardinals are really cute because they’re couples and the males will often chirp chirp and then feed seeds to their little lady friends.
