@manmademoon.bsky.social i made tahdig last week. my second attempt and it worked out very well. served with butterfly yoghurt spice marinaded leg of lamb and a winter citrus salad 😊

found two steaks in the freezer so did them with a reduced butter, jus, garlic, thyme, worcestershire sauce, sauce 😊 served with crispy fries and green beans. perfect saturday dinner.

yep, buttermilk wings again with french fries, green beans and a deliciously viscous jus. half term so playing the hits.

fried some gnocchi in bacon fat then tossed in a tomato cream sauce with chilli, garlic and my beloved fennel seeds. very nice with leftover salad.

boiled a couple of eggs then mashed them up with kewpie mayo and some scallions on a toasted sourdough bagel with a dusting of black pepper to set it all off. really hit the spot on a cold day.

finger lickin’ buttermilk brined fried chicken. got d_bone here for a sleepover so going all in on the family favourites 😊

my gran was one of 18 children. 5 of her brothers were dead before they were 12. if you are an anti-vaxxer i recommend a walk around a london cemetery. perhaps you may notice how there are so few dead children since the second world war? why do you think that might be? just good luck?

lunch was worthy of st valentine himself. yoghurt spice marinaded lamb taken off the bone and BBQd, tahdig, winter citrus salad with pistachios. some yoghurt swirled with rose harisa and pomegranate for a bit of a dip.

first attempt at #tahdig since we had dinner with our rave vicar and his family before we got married 14 years ago. can be tricky but good olive oil, butter, saffron, turmeric layer and careful washing of the rice has delivered this banger. shout out to @zemblamatic.bsky.social for the inspiration 🙌

been a bit miserable today so double carbed it with five spice perfumes fried chicken and a Thai red curry sauce of green beans and mixed winter toms from Cyprus. delicious. I feel renewed. well, ready for an early night 😊

a rewind on the smoked salmon and ikura with the lemon zest horseradish cream. much preferred this waved in a toasted bagel. the richness offset by the carbs and making for a breakfast sandwich that was succulent and delicious.

crisp fried some gnocchi in butter and garlic to go with that pot roasted chicken. made a sauce from a forgotten block of beaufort d’alpage and whipping cream. a delicious funk that worked well with the smoked bacon. sweet cabbage and carrots for health.

two packs of bok choy blanched in boiling water then stir fried for about a minute with garlic, soy sauce, oyster sauce and shaoxing wine. really delicious with last night’s glazed salmon. would be a lovely light lunch on with some rice 🍀

rewind and come again: avo, lime, salt, chilli, smoked salmon trimmings galore, winter tom and some crushed black pepper. I’m serving with a pot of freshly ground Monmouth coffee 😋

stuffed toasted bagel with sliced avocado on fresh lime, salt, chilli. then topped with winter tomatoes and smoked salmon trimmings. got a kg of them from Goldstein’s for £20. so delicious and packed with healthy oil. would have been cream cheese but had run out. this is better. much more delicious.

naughty brunch of crispy, streaky bacon with fresh pancakes and maple syrup.

buttermilk brined thighs deep fried in a five spice crust on a red thai curry sauce. only had the black narone rice but it worked really well with a nutty vibe. this was so delicious.

buttermilk brined wings again but served more simply in pressure cooker chicken jus, crispy French fries and some green beans for some minerals and extra succulence.

just a mess of beans tonight and green salad leftovers. mad love for all pulses and legumes. we have to feed that biome.

you just cannot top the pressure cooker jus. had used up all stick last night so went with a glass of breton cider and three cloves of garlic. the pressure turns that into an unctuous broth. so good with the bacon and mushroom.

well the good news is that dinner was lovely: chicken and chickpea casserole with butter fried gnocchi and green beans with some nuggets of calabrian sausage in whose rendered fat the chicken started its journey.

buttermilk brined wings for first time this year. made a hoisin sauce to dip. served with stir fried green beans in a black bean and garlic sauce. delicious and welcome after a tiring cycle back from the Hackney Wick saunas in the driving rain 😋🌶️☔️

smashed off 10k in the rain so needed a lovely lunch.

standard Sunday fare chez hass: pressure cooker pot roast. red cabbage because it’s been sulking since dropping out of Christmas rotation, broccoli for greens, wee spuds to soak up the pressure cooked jus. got the spot.

made a lasagne. wanted to go pasta heavy so managed to get 8 layers in there. alternating layers of beef ragu and bechamel with a lovely parmesan crust. served with a chopped green salad.

today last year i found a partridge in the freezer so wrapped it in bacon, butter, crushed juniper berries and thyme then roasted. serving with baked pear and fried gnocchi tossed with red cabbage. sauce was roasting jus made with pear cider. it was really good and needs to happen again.

pollo asado tonight, lads. with fresh pico de gallo, red pepper salsa, avocado, tortilla, and mex style rice.

leftover gnocchi tonight which I’ve pimped with stock, garlic, chilli, olives. about to get a blizzard of parmigano and served with a big green salad 😊

the ghosts of christmas past as a risotto tonight. cooked with some cured ham I got in france, brussels sprouts, half a baron bigod and some chopped chestnuts. so good!

had my favourite cousins over from Ireland for lunch. pot roast chicken with gnocchi cooked in calabrian sausage fat with a cambozola sauce. delicious though off message with january austerity vibes 😊

getting back into a less indulgent pattern after a lovely xmas of treats and big meals. beans and chickpeas cooked in gammon stock with sofrito, spinach and tinned tomatoes. bit of chilli and smoked paprika for heat. fennel seeds for a whiff of mystery. gonna eat with great buttered naan 😋

oooh that ham was nice. cooked with pomegranate molasses as the glaze. served with garlic fried sprouts - turns out I now love sprouts - and caramelised pineapple slices. delicious!
