I'm trying to cook more adventurously. This month that meant buying a frozen whole duck. So far I've made stock, processed the fat into cracklings and duck fat potatoes, and made duck confit. Tomorrow is roasting dry-aged duck breast and preparing posole with the duck stock for Christmas.
