Took advantage of the random 83 degree day and went to the beach for an early surf fishing teaser

Rice steamed, koji and yeast in. Fingers crossed. First time doing a full-on koji inoculation, then using it to co-ferment rice. I've used the "magic yeast" that does it all at once, but it's a lot more of a weird umami flavor. I don't truly know what proper koji smells like, it seemed ok.
