Toying with my purin recipe a bit tonight. Instead of four yolks/two whites, I’m going even three each. Sacrificing a bit of egg flavor for slightly firmer textures. I find 4 whites too much and 2 is a bit too wobbly.

You know, I did some number crunching tonight and found that with some budgetary finagling, a tax code that actually managed to pull money out of criminal billionaires and a slight restructuring of Social Security we could easily afford a UBI of $10k a year for all adults in the US.

Last week, I made these and failed the caramel topping. THIS WEEK, I fucking nailed it.

Just under an hour to make caramel and custard for puddings and use the leftover egg whites to make a quick egg sandwich. Not bad.

I DID IT!

Just because I couldn’t make the sauce doesn’t mean I have to go completely without!

God, I’m glad I have a tendency to clean up cooking as I go.

The first Turkey dinner I ever made, and many lessons were learned. For instance, the bird is the LAST thing you prep. At least if you’re only making a single breast.

Damn, no crispy skin on my turkey for me today. Shouldn’t have tented it in foil if the breast only needed an hour or so to hit temp.

Well, while I may not have been able to get the caramel right this time, I DID do pretty alright with the custard. Even with only 3 hours chilling in the fridge, it turned out very well. Nice smooth texture and JUST enough resistance to get a good jiggle.

50 minutes at 300 Fahrenheit and my puddings refused to set. PAIN!

Giving up on the caramel sauce for tonight, just gonna steam my custards.

This is my FIFTH attempt. I cannot keep this temperamental bitch from crystallizing.

I like learning new cooking recipes, but Christ almighty is doing ANYTHING with sugar that isn’t just mixing a bitch.

Why do NONE of the recipes I found stipulate you can only make caramel sauce in a STAINLESS STEEL VESSEL! I lost Three Attempts because I was using a ceramic coated sauce pan. Thank god I still have plenty of sugar. I AM slowed however because my stainless is currently heating milk for custard.

I haven’t even updated to Windows 25H2 yet, but the last round of security updates seem to have done some weird shit. Yesterday I had to do a log out/in to safely remove an external and today I had to hard shutdown to get audio to work.

You know, people in the Pokémon Legends ZA competitive scene like to poopoo using alphas because of the bigger hitbox, but there is something incredible about getting smacked by a truly massive dragonite. Also, alphas generally require less investment due to having 3-4 perfect IVs.

I've filled the pokedex and completed every mission, but I'm still only at 821 of 1000 trainer battle victories for the shiny charm. End me.
