Lunch: Black bean and TVP chili high protein pasta bake with green salad. #plantbased #vegan My latest favorite pasta is Barilla Protein+ Rotini. It's made with Lentil, Chickpea, Barley, and Spelt Flours with Pea Protein but it has some Durum Wheat too so it's texture is more like regular pasta.

Got the Trader Joe’s Harvest chili and doctored it up a bit by adding a can of black beans, poblano pepper, more chili spices, extra tomato paste, a can of chopped tomatoes and TVP for extra protein. Coupled it with a baked sweet potato. Yummy and filling meal! #plantbased #vegan

Ok it’s been a minute. I was sick with a pretty fierce flu basically the whole month of January. Still have a little runny nose and a cough but both are fading. First time in my life I’ve been this sick this long. Whatever strain of flu this was it was a doozy. Thankful my body took care of me!

This was the Thanksgiving feast my family enjoyed. Out of 12 dishes on the table, I cooked 10 of them. The stars were a vegan roasted butternut squash + triple mushroom Wellington and persimmon, pomegranate, mint salad. I bought half pumpkin and pecan pie to create a ying yang pie aesthetic. 😂

Today was round 1 of Thanksgiving cooking. I’m cooking about 90% of the food this year….and indeed most of it is #plantbased #vegan. Using lots of mushrooms and roasted butternut squash. Roasted sweet peppers are making an appearance in the soup.

Enjoying breakfast with my auntie. She’s moving to the Philippines soon. Got her the plant-based breakfast sandwich. Every time I say, “This food is vegan auntie so what does that mean?” She replies, “It has no cholesterol.” This will be one of the things I will miss most when she moves. 🥹
