Archimedes was a known member of The Order of Pi. As such, he spent a good deal of time thinking about how to approximate pi. As this happens to be #piday #caturday, may I present to you Archimedes, who spends most of his awake time twirling in circles chasing his tail.

This is my pizza. Seeded whole wheat sourdough crust. Dead nettle, basil, and hummus pesto sauce. Topped with baby Bellas, red onion, heirloom tomato, and dandelion leaves. A balsamic glaze. And some of the tzatziki.

I just love this little piece of art. I wonder, though, would the lights have been the same colors? Was the chemical makeup of the atmosphere different than today? I have things to google.

Cleavers tzatziki sauce: Blanch a handful of cleavers. Add then to the food processor and give em a whirl or two. Add in 1 cup plain soy yogurt, 1/2 squeezed lemon, garlic (you measure garlic with your heart, not the recipe), dill, parsley, mint, salt n pepper. Whirl it.

Update: I decided to blanch the cleavers before smoothifying (boil for 30 seconds then ice bath). I did need to add a bit of honey to this recipe. It will - make your tongue and throat tingle. Perfectly normal - make your nose run (drain lymphatic system!) - make you pee. Drink lots of water

This is a rare ‘fire rainbow’ spotted over the Rocky Mountains, created when sunlight hits ice-crystal clouds at just the right angle. Seeing a fire rainbow requires extreme luck.

Gdaughter and I had a blast foraging wild greens this morning. We picked purple dead nettle, cleavers, and dandelion leaves. I’ll be using these to make pesto and green smoothies. Recipes in comments.

Y’all! The spider is not dead! I thought Archimedes ate him the other night, and I was pretty sad about it. Anyway, he came out today and I was able to get him onto an envelope and then place him into his open air terrarium, aka my kitchen herb garden.

I became a vegetarian when I was 19. Recent transition to a Whole Foods plant-based diet was not easy. However, I now eat the yummiest food I’ve ever had, I have energy to last the entire day, pain levels are significantly reduced, I sleep 6 hours per night and I’ve been able to come off all meds.

The sourdough has been baked! Since I used whole wheat flour, it’s a little dense, but out of this world yummy!

On my walk this morning, I was able to harvest 3 cups of purple dead nettle. Which I turned into a pesto with a combination of walnuts, pistachios, and sunflower seeds. Absolutely delicious! Next time I feed the sourdough (in about 3-4 days) I’ll make sourdough pizza with the pesto as my base.

I refed the starter last night and used the discard to make sourdough pancake batter, which I chilled overnight. Best freakin pancakes I’ve ever had. I used Montana prairie gold wheat flour, which is the best flour on the market, imo. Started a loaf of sourdough this morning. Will bake it tomorrow.

A friend of mine sent me a bit of dehydrated sourdough starter from a yeast that he caught while working in Yellowstone last summer. It’s taken about a week but wouldn’t you know that I got it up and running. Rubber band marks the level when I fed it this morning.

My late auntie left me an inheritance and I’m pleased to announce that all the paperwork has gone through and I am now the proud owner of Sasquatch Snacks, which is a vending machine company.

This little guy moved into the house a couple weeks ago. I’m not sure I’m quite ready for a crawl up onto my lap and snuggle situation yet, though. Might have to ask him to move out. Or I might build him an open terrarium to live in.
