Rebosero is an heirloom bean passed down for generations in rural Hidalgo, Mexico. In Mexico, a rebozo is a shawl. Perhaps if you were drunk, you might think these beans resemble a shawl, but who knows? Who cares? It's fun to say the word rebozo, and it's more fun to eat these delicious beans.

Todayās project was making epazote salt with this plant that comes back every spring and Jacobsen salt. I even made a quick video. Epazote is famous for helping make beans digestible, but I think itās most valuable as a culinary herb. Itās an invasive weed so best to grow in a pot like this.

The Rancho Gordo staff has been on a rice cooker lunch kick, and this was a standout. Rancho Gordo brown rice, bean broth, and sliced wild mushrooms went into the rice cooker. Once done, we topped it with Buckeye beans and a drizzle of chile oil.
