Been doing a deep dive into Quakerism over the last little bit. There's a lot there I really appreciate, especially in the liberal branch. Not sure where (if anywhere) that will lead, but it's been wonderful to read and reflect on it.

It is really hard to eat more #plantbased when you prefer homogenized textures and it seems like everyone else wants anything but. Indian recipes have been a saving grace. Outrageously yummy with infinite variations of dals and curries over rice. A little immersion blending and done!

Other cheeses in my #vegan #cheese challenge this weekend! I made a pub cheese that doesn't taste anything like pub cheese but was still a tasty spread, a sliceable grateable cheese that's great but is a PITA to make, and a pourable mozz that worked just fine on a pizza. I'll count them all as wins.

This is my "find #vegan #cheese subs that work for me" weekend. First up - cream cheese! Had it on a bagel. It's good! There's enough of a nut flavor to feel like a fancy breakfast cheese while still having that dairy tang, and it was easy to make too. Might try adding pecans and/or maple for fun.

Totally anecdotal, but I'm noticing lots of out of stock items at my local #Louisiana grocery stores. So have the Instacart drivers I've talked to, and I figure they'd see more than people who only shop for themselves. I'm getting concerned (again) about #shortages. There are usually subs but still.

Yay #vegan #macandcheese! The recipe was pretty good as written, but I like sour cream in my mac and this recipe didn't have enough tang for me. I used half again as much #lacticacid as called for and bam. Perfection. It even has a cheese pull!

I'm trying to eat more #plantbased but my #ARFID means I struggle hard with vegetables. I can't handle the textures. So I made this recipe with my #Vitamix. There are veggies I have never once managed to eat in there! And it's GOOD! All it needs is protein pasta and some vegan parm. SO. STOKED.

Just made this. It's cheap, easy, tasty, and filling while being very sensorily gentle. This'll be great on #autisticoverwhelm days. Gives something warm in the tummy without demanding much from me. What I don't eat today gets portioned out and frozen. Served with buttered toast.

I eat #lowsodium for #hearthealth. #Processedfood is usually high in salt, which forces me to cook from scratch. And since I'm doing that ANYWAY, going #plantbased is actually easier than not. Proteins and grains tend to be both cheaper and more often shelf stable than meat and dairy. Wno knew?

Set a boundary with my #dietician this week - I do not want the 2026 #foodpyramid involved in my care. I want to keep anything #RFK has touched far away from me. I don't trust that #HHS or #USDA is putting people above profits and corporate lobbyists. I'll look elsewhere for reliable info.

#soycurls are an awesome #vegan protein, but they are ALSO an #autism hack. I make one batch a week (beef or chicken) and toss them into whatever dish I'm making. Shelf-stable until cooked, same texture every time, healthy, cheap, no ickiness, and while I CAN tweak the recipe I don't have to. BLISS.

FYI: Judge Ellis (Chicago ICE case) noted in November that video evidence shows ICE "brake-checked other motorists in an attempt to force accidents that agents could then use as justifications for deploying force."
