Turned 41 today. Got stabbed 6 times by some medical vampire that took 6 vials of blood and a cup of piss. Kinky bastard. Made a half sheet cake for my coworkers, vanilla sour cream cake with fresh strawberry buttercream frosting. And had my favorite Chinese food for dinner.

Made biscuits and gravy this morning, with a side of sausage patties and scrambled eggs. Wish I took a picture but I was hungry and craving this type of breakfast all week.

Alright, bit of a late start to my Sunday plans but I got my car gassed and washed up, got all the trash and recycling out of my car, room and bathroom. Started laundry, made my bed, went to the grocery store for the stuff that was on sale. Bread, juice/tea,cheese.

Well fuck… My work computer just blue screened. Currently rebooting and will try to recover the email I was just in the middle of.

Of course I request a day off for a doctors appointment and get a call two hours before to reschedule as my primary physician is down with a cold and the only other appointment that isnt 3 weeks out is tomorrow at 2pm

Was still a little hungry after breakfast, so I’m having something sweet.

Made my family favorite half hobbit breakfast. Meaty sausages, extra thick cut bacon, hash browns, scrambled eggs, sautéed mushrooms and onions, thick sliced toast with butter and strawberry jam, coffee, orange juice and what I like to call scurvy water for my dad since he can’t have oranges. 🍋💧

Hair is at that weird length again… Not sure what I want to do with it. Also all the grey strips.

Still adjusting to my body being 38 lbs. lighter than it was 3 months ago. I technically dropped a pant size which is wild. But to be honest, it wasn’t intentional. The stress of my new position at work has been a bit taxing causing some gut problems. But I’m working through it.

So happy right now, made Sunday dinner for the family. Prime roast, medium. Garlic mashed potatoes with a pepper mushroom gravy made from the pan dripping of the roast, sautéed spinach and peas. Lastly some simple oven roasted baby carrots.

Hand shredded pork at 185 degrees. Cause I got those Mexican mom hands. Also hand shredded 3 rotisserie chickens for Sam’s Club. Only making 45 lbs of tamales this year. Still need to break down 10 lbs of cheese. Sweep the entryway and stairs, vacuumed the family room. Need to dust and shower.

15 lbs. of pork shoulder starting at 375* should be done by 8-9. Turn off the heat, let it rest for 45 minutes. Pull out the bones, then hand shred. Get the drippings from the pan let it separate and soak the meat just enough so it doesn’t dry out. Let it rest then into the fridge for tomorrow
