Peach Bellini jam: 3 cups of chopped peaches, 1 cup prosecco, 7.5 cups sugar, 2 tbsps lemon juice. Bring to a boil, and 1 envelope of liquid pectin, put in the jars and boil the canning jars for 5 min.
