One of many great things about baking my own bread, every two weeks or so, my tiny apartment smells of fresh baked bread for a night.

Tonight was very much a comfort food dinner. Chicken Soup with a Chicken salad melt on the side. The soup was made with homemade chicken stock and and egg noodles. The sandwich was made with my homemade oatmeal bread.

Third attempt at oatmeal sandwich bread. The previous attempts had a nice taste and texture, but the top kept collapsing, which was due to over-proofing. This one looks perfect, but I still need to wait until it cools before slicing into it.
