Ep 34 is where they introduce the idea of newtypes, though they haven't used the word yet. Also the first time the "newtype noise" is used. Seems that the concept was invented mid-production where initially it was the power of the Gundam that allowed the White Base to succeed, but now its Amuro.

Amuro meeting his father is an interesting moment. He gives Amuro an upgrade part for the Gundam which in most shows would be how the main robot would get more powerful partway through the series, but instead its a piece of junk that shows his dad has brain damage from being ejected from a colony

ep 14 of Gundam is great, Zeon soldiers plant timebombs on Gundam so Amuro has to remove them before they explode. The Zeon soldiers watch from a distance and are so moved by his bravery they start to root for him. Its a great moment of humanity between the two sides

ep 9 is when amuro's newtype ability is first mentioned, but uses the word esper instead. May have initially been written as just a compliment to his skills, then extrapolated later into the newtype concept
