Well, the night took a turn. We pulled into the apartment complex, and there was a homeless person slumped over in a wheelchair in the front parking lot. Pulse was funky and they weren’t responding to verbal or physical stimuli, so we called for an ambulance.

Was definitely annoyed at all of the vendors using AI art out at the Texas State Fair today. I don’t wanna see what M*djourney pirated to represent your food, I wanna see what your food actually looks like. (And this isn’t even touching on all of the t-shirt/art places that also used AI art 🤢)

Still love the #TexasStateFair, but prices have gone through the roof and portions have gotten smaller. Just another example of the enshittification of literally everything.

Gave some scritches to goats, ponies, donkeys, water buffalo, cattle, alpacas, camels, and emus. The goats enjoyed it the most, but everyone was very appreciative of the lovin’s! #TexasStateFair

We’ve been watching the new season of ‘Wednesday,’ and while I don’t think it’s as strong as the first season, I do absolutely love the casting!

Tonight for dinner: Twice baked potatoes with provolone, Gouda, Monterey, cherry tomatoes, turkey bacon, shredded chicken, green onions, and portobello mushrooms served up with a green salad (romaine, cucumber, bell pepper, green onion, serrano chile, avocado, sunflower seeds & lime vinaigrette).

This ube syrup I made for these matcha lattes is insane addictive 🤤🤤🤤 I have a terrible feeling I’m gonna burn out on this so fast, but I’m loving it while it lasts lol

‘The Wiz’ was fantastic! The cast was absolutely wonderful, and it was a treat to see it on the stage!

Roommate’s WASTED (he hit those mimosas HARD), so I made some naan, jasmine, rice, and coconut curry to soak it all up lol We’re going to see ‘The Wiz’ tonight, and I’m not going by myself 🙃

It’s always so fun running into folks out at the farmers market. Gotta fine more local places and spaces to create community.

This morning’s latte didn’t layer correctly (I used stemless wine glasses lol), so no picture, but the ube flavor from the syrup comes through PERFECTLY! Not too strong, not too sweet, and perfect with fresh matcha, oat milk, and a shot of espresso ✨💖✨

I let the syrup strain overnight, and it seems like it was a tasty success! I’ll make some lattes with it in a bit before we head to the farmers market for breakfast pupusas. Might be able to use the strained pulp to bake muffins or something 🤔

So, using the ube-taro extract today was great, but the latte needed a bit of sweetness and a bit more potent ube flavor. Found some freeze-dried ube I forgot I picked up a few months ago at 99 Ranch Market, and I’m making some brown sugar syrup with it. Kitchen smells so good 🤤🤤🤤

Yeah, ‘Superman’ was just as fucking fantastic as it was in theaters! Gonna have to pick this up when it’s released on 4k.

Should have done this with day 1 or 2 dough… The day 3 dough didn’t have quite enough rise left in it to handle the mass amount of cheese on and in this bad baby. Wasn’t terrible, but the texture could definitely be improved. Gorgeous cheese pulls, very flavorful, and totally worth another shot!

Attempting to use the last of this batch of pizza dough and some mozzarella sticks I picked up today to make some stuffed crust pizza for an at-home viewing of ‘Superman’ tonight. Probably gonna keep the toppings simple with turkey pepp, thinly-sliced serranos, sweet peppers, and cherry tomatoes.

Picked up some matcha while grocery shopping today, and decided to make myself a little oat milk iced ube-taro matcha latte as an afternoon treat to enjoy on the balcony with Freya and Reese.

Thought I’d ‘bloom some spices’ for the sauce I was making tonight, and forgot that the particular homemade spice mix I threw into the hot oil had ghost pepper in it… I’ve been coughing for an hour, but the breakfast pizza turned out great lol

My roommate’s been pumping himself up for work in the morning by putting on the ‘KPop Demon Hunters’ soundtrack in the morning while he gets ready, and honestly… I kinda wanna try it lol

The news is bleak, but my algorithm stays hopefully and resilient. That’s gotta be something, at least…

Definitely had an ugly cry this morning. We were having an espresso before heading out to the Farmers Market, and the tinkling of my roommate’s teaspoon as he stirred his espresso sounded like Bosco’s favorite jingly-ball. Had to excuse myself to go cry in my room for a while. Miss that boy. 😭
