Cooked some Japanese food tonight. Pork belly, slow cooked, lightly brushed with soy & togarashi. I trimmed the ends & cut them into pieces, fried them off & used the rendered fat to cook the egg for my fried rice.

A take on the famous Rigatoni Al Segreto from Ginos in NYC, by adding homemade Italian fennel, onion & black pepper sausage. I'm generally against messing around with classic recipes but this really does work. The finely minced sausage complements the sauce.
