Whether it’s breakfast, lunch or a light supper, an omelette is always popular here.This was that most French of dishes, an omelette aux fines herbes, two eggs & a mix of chives, parsley, tarragon & chervil. Some prefer theirs as pale as the heroine of a Victorian novel, but we like a little colour.

Celebrating the early start to the English asparagus season, with a round from the Chinn family at Cobrey farm. We cooked the asparagus from neighbouring Herefordshire, (not Kent, apologies) in our 9” chef’s prospector casserole, then liberally anointed it with a dulse beurre blanc.

As soon as we saw Urvashi Roe post a photo of her peanut stuffed aubergines from her mouthwatering and hugely entertaining book Biting Biting, Snacking Gujarati style, we knew we had to recreate it. And here it is, snuggled very tastily in our 9" chef's prospector pan.

Baltis are not only defined by the spice mixes used to create their flavour, but also by the traditional vessel in which they are cooked & served. We don't have a traditional balti dish, but we did use our prospector wok to make this paneer & veg balti. Not authentic, but pretty close & very tasty

I recently got rid of all my non-stick cookware because of concerns about toxic chemicals. I replaced saucepans with plain stainless steel & frying pans with seasoned carbon steel from @nethertonfoundry.bsky.social I was skeptical that seasoned pans would be non-stick, but these are brilliant.

As Tony Turnbull writes in @thetimes.com “white fish and cheese is a great combination”. His recipe for Cod Mornay, photographed by Romas Foord in a Netherton Foundry prospector pan, looked so tempting, that it dispelled the horrors of bygone meals so thoroughly we rushed to recreate it ourselves.

Purple, white & green; the colours associated with Wimbledon, the Suffragette movement & the genderqueer flag. Visually interesting, culturally important, but our tasty take appealed to taste as well as sight. A prospector tray of Romanesco, purple sweet potatoes & Halloumi was a very tasty dinner.

These fish cakes, amde with smked haddock were utterly delicious, especially under that river of parsley sauce. The childhood trauma of parsley sauce packet mix and “fish” cakes, comprised of 95% potato has been put to rest with these, but peas are always non-negotiable!
