Look at that! My starter was already way past it's peak and I had to give it an overnight final proof instead of a few hours, but the result is pretty good! 10% rye, 20% spelt, 20% Emmer, 25% wheat and 25% breadflour with linseed & pumpkin seeds. 80% hydratation
