one month update on this: i don't understand clotted cream. its like butter if it was harder to get. it is nutty, and the texture is a bit different, but it mostly just melts into milk fat and so i feel like 90% of the time i could sub butter and it would be basically the same. so i dont get it.
add a skeleton here at some point
