For the paste, I went a little bit off script and the flavor profile is incredible. 10 cloves garlic, 6 root ends cilantro, 2" pc ginger, 3 tbsp fish sauce, 1tbsp dark soy sauce, 1 heaped tbsp of honey, 1 lg Asian pear, 1/3 cup gochugaru & 1 heaped tbsp gochujang. Now I wait. 🍽️🍜🫙🥒🥬

Experiment of the day (month? year?). Created a master dough which will be used as often as needed until it reaches 200 g of the master then "fed" with flour, water, yeast. As it ages it will take on sour notes like a sourdough without having to feed a starter. 1/2
