The boy loves a steak. We dry brined these bone-in wagyu sirloins for 24 hours then grilled them over charcoal (with some romaine lettuce and sweet peppers) and they were delicious. A long dry brine with coarse sea salt makes a huge amount of difference! So juicy and tender.
