In the pacific isles, it’s called, “island time“. In Saudi Arabia, it’s called, “Inshallah“. Here in Mexico, it’s called, “Mexican time.“ so when she tells me dinner will be ready at seven, I know that that’s a flexible number all the way up until midnight. Don’t fight it, just roll with it. 🤙

True story, yet strange. The wife and traveled to a fishing village to spend the night for no other reason then to have an adventure. As we wandered down the beach for a stroll, we were escorted by three stray village dogs. When other dogs tried to approach, they were chased off by our escorts. 1/2

I spent a couple of days with some pork knuckles to make a soup stock, and then after I was done with the bones, we put them into a bucket and put them out on the sidewalk. That day, we made several neighborhood dogs very happy. Here, showing respect and love for the strays reflects well upon us.

Life always gets away from us, we always plan to do more than we physically have the time to accomplish. We did not make meatloaf, however, I spent two days reducing our bone broth and today I added the vegetables to make a soup stock. We often have plans to do seven things yet can rarely do two.

Making soup stock. Yesterday I smoked bones on my Weber kettle. Today I will add those bones to a bunch of water to reduce. Later tonight, I will add vegetables and then strain. Tomorrow I will have soup stock. Worth it? No idea, this is my first time.

Yes, all amateur backyard chefs need a flame thrower. It’s a necessary kitchen utensil. 😉 The ham looks dark because I used a brown sugar, cherry glaze and caramelized it in the oven before serving.

Here we go again! At the bottom of the pan are several oranges and some apple juice. The ham has been rubbed with a spicy English mustard and liberally covered with a Texas style pork rub and black pepper. The next two photos are slathered with a spicy cherry, brown sugar, hot honey glaze.

Next up! Making some Jalapeño Hot Honey, followed by some oil and honey sautéed cowboy candy. Yum!

First food photo in our new refrigerator. Pickled jalapeños, vinegar, water, sugar, and salt. But we went a little bit untraditional and added roasted garlic purée and Chinese five spice, just to shake things up a little bit. You’ve probably already noticed the spiral cut ham, defrosting.

2 kilo beef roast salted, left uncovered in the fridge overnight to dry brine, seasoned, seared in a hot cast-iron skillet to put a good crust on it. Now it’s in the instant pot with banana peppers where it will stay for about an hour before adding the vegetables.

Nunca Jamas (never nothing) is our favorite Mexican rock band. We traveled north to San Carlos to watch them perform live, and it was absolutely fantastic. On Sunday, we stopped by our favorite Micro brewery and had a beer and a bite before we headed back home again. Three varieties of hummus. Yum.

On our way to the river for a family picnic on Sunday, we picked up a hitchhiker. Generally not advised, but on this occasion, we made an exception.

The wife and I headed north to a lovely resort in the town of San Carlos to listen to our favorite Mexican rock band perform at the same resort. This is the view from our room. I’m not sure how, but somehow she managed to get this room for less than $100. I’m pretty sure she’s some kind of a witch.

We are building an outdoor kitchen, but the drainage did not drain. We needed to replace all of the drainage lines from the backyard all the way to the front yard. It took a couple of days and was pretty terrible. Anyway here’s the unfinished product, here’s to hoping that we have tiles soon.

This is our fourth and final remodel of our home. We did the kitchen, the bathroom, and the master bedroom. Every step of the way, the beginning stage looks grotesque, however the finished product looks fantastic. I’m looking forward to my new outdoor kitchen.

My wife and I went to a beer festival in Mexico. Upon entry we were patted down, but the young man that conducted the pat down had never received any training. They checked pockets and we were moved along. They did not check anything else, neck line, waist line, armpits nothing.

Mexican police brother-in-law got into a gun fight today with two cartel Sicario’s. No police were injured, but the event ended with one cartel death and one in police custody.
