Experiment of the Day: Pumpkin Rice Pudding. 2 c cooked Jasmine rice transferred to a buttered rectangular cake pan. Stir together: 1 can pumpkin puree, 1 can coconut milk, 1 can sweetened condensed milk, 2 eggs, splash of maple syrup, spices to taste. Add to rice & mix well.
