Our whole hog is the barbecue we've been doing longer than anything else, the number of pigs John has cooked would now be over a thousand! It's probably more of a Tennessee style than Carolina, very low & very slow, but always a popular night here at the smokehouse! 🔥

How do you like yours?

Fish sauce caramel ribs. Fish sauce, minced ginger, minced garlic, sambal, sugar and a little water. Marinated some scruffy ribs in it, thickened the mix and then glazed over and over to finish. Sweet, salty with lots of lovely crispy, chewy bits. Look a little rough perhaps, but tasted fantastic 🔥
