Whisk 2 eggs, add salt and pepper, let sit for at least 15 minutes. Knob of butter in non stick pan, medium low heat. Add eggs when butter is just barely fizzing. It goes slow at first, but soon the scramble comes together. Put eggs on toasted bread/bagels with choice of jam. ENJOY!
