This video shows how to do that. You use the hue/saturation command (instead of intervening only on the saturation) as it doesn't alter the 'hue' value. Simply bring saturation to zero without altering the other values.

Late at night. Colour is not a property of reality, but is entirely created by our brains. During the day we see in a trichromatic system, but when it gets dark enough, we see in black & white. If you print this image and look at it in the dark, you will see a single grey rectangle. Give it a go!
