I came back from Toronto last week and afterwards got knocked out with Influenza A. The visit itself, the flight, jet lag and sleep deprivation really did a number on me. Fortunately I’m on the mends now.

I have acquired many tricks to making a good cacio e pepe ( finely grated pecorino Romano, adding some pasta water to the skillet while the pasta is still cooking to make a super starchy base) but now we finally get to see some proper science to making this delicious dish.

Somebody can be writing poetry and reading Chaucer, it does not give them the right to use your body without your consent.
