Done! Vegetarian Peruvian Arroz con Pollo but with air fried tofu. The homemade breading helps give the tofu that "chicken" flavor. Enough for six meals. Also made vegetable soup for a few days. And Poe loves to watch me from across the house while I work in the kitchen.

Lunch! Used the leftover vegetarian chili I made a couple of days ago to make chili cheese fries. The potatoes were cut and put in the air fryer for about 22 minutes. Topped it all with nonfat Greek yogurt instead of sour cream.

Cake success! I made a modification to my mom's friend's cake recipe by reducing the amount of sugar, offsetting the oil with almond milk ratio, and I was able to reduce the calories per slice from 189 down to 153. It still tastes great and is not as heavy or super sweet.

Lunch! A vegetarian lentil "Bolognese" pasta dish. First time making it and I was surprised on how well it came out! I somewhat followed the recipe from Nisha Vora but modified it based on what I had in the kitchen along with how I usually make pasta dishes.

Peruvian Arroz con Air Fried Tofu Chicken. The tofu has been lightly coated with cornstarch which has been seasoned with a dash of curry powder, chili powder, garlic powder, salt and pepper. It's been given the spritz olive oil before putting it in the air fryer. Served with a sweet onion lime slaw.

Lunch! Prepped the dough in the morning, prepped the pizza after the banana bread was removed from the oven, and threw the pizza in there once the temp was up. Toppings are turkey pepperoni, sweet onion and pickled sweet peppers from Gwen's garden.

Lunch! Incorporating the Peruvian pesto sauce into different recipes. Used it to make potato salad instead of using mayonnaise. Also added fat free Greek yogurt and Parmesan cheese. Chopped celery and spring onions, and one red bell pepper from Gwen's garden. It was so delicious.
