An olive and feta pasta salad. The dressing consists of a drizzle of olive oil, a bit of the olive juice / brine, salt, pepper, and a little garlic powder. Includes diced sweet onion, celery, and orange bell pepper. Sliced olives and chopped Italian parsley.

Dinner! Peruvian tallarin de pollo (but with turkey breast). I make it the same way my mother used to make it.The shredded carrots cooked in the simmering tomato sauce gives the dish a pleasant and lightly sweetened flavor. And the bay leaves also help give the sauce its unique flavor.

Homemade salsa! Used the roasted chili pepper variety purée that I roasted and froze last summer. Roasted some tomatoes and onions today. Diced up some green onions and tossed in fresh cilantro. Also included garlic, a dash of ground cumin and salt.

The weather has been great all day today. This was around noon. It's now overcast but still nice. A great amount of rain yesterday and I could tell which houses did not clean up their doggy doodoo because so many backyards smelled awful.

Done! Vegetarian Peruvian Arroz con Pollo but with air fried tofu. The homemade breading helps give the tofu that "chicken" flavor. Enough for six meals. Also made vegetable soup for a few days. And Poe loves to watch me from across the house while I work in the kitchen.

Lunch! Used the leftover vegetarian chili I made a couple of days ago to make chili cheese fries. The potatoes were cut and put in the air fryer for about 22 minutes. Topped it all with nonfat Greek yogurt instead of sour cream.

Cake success! I made a modification to my mom's friend's cake recipe by reducing the amount of sugar, offsetting the oil with almond milk ratio, and I was able to reduce the calories per slice from 189 down to 153. It still tastes great and is not as heavy or super sweet.

Lunch! A vegetarian lentil "Bolognese" pasta dish. First time making it and I was surprised on how well it came out! I somewhat followed the recipe from Nisha Vora but modified it based on what I had in the kitchen along with how I usually make pasta dishes.

Peruvian Arroz con Air Fried Tofu Chicken. The tofu has been lightly coated with cornstarch which has been seasoned with a dash of curry powder, chili powder, garlic powder, salt and pepper. It's been given the spritz olive oil before putting it in the air fryer. Served with a sweet onion lime slaw.
