Homemade quinoa salad. It has cooked quinoa, cucumber, tomato, cilantro, an eighth of a sweet onion, crumbled feta cheese, limes juice, salt and pepper, and a tablespoon of olive oil.

Lunch! Estofado with vegetables only. Came out well!

Bread! Didn't want to waste the heat since I was planning on making pizza tonight. Prepped bread dough earlier in the day to bake after the pizza was done.

Dinner! Turkey pepperoni pizza with sweet onion and red bell pepper. Prepped pizza sauce to freeze for future use.

Lunch! Orange tofu with rice. Tried a new method (for me) on preparing the tofu. Came out delicious!

Lunch! Beyond Burger with roasted vegetables. Burger is leaning like,"You're gonna eat me?"

Gotta keep that nose warm.

Lunch! Prepped the dough in the morning, prepped the pizza after the banana bread was removed from the oven, and threw the pizza in there once the temp was up. Toppings are turkey pepperoni, sweet onion and pickled sweet peppers from Gwen's garden.

Banana cranberry walnut bread just came out of the oven. The house smells so good right now.

Lunch! Incorporating the Peruvian pesto sauce into different recipes. Used it to make potato salad instead of using mayonnaise. Also added fat free Greek yogurt and Parmesan cheese. Chopped celery and spring onions, and one red bell pepper from Gwen's garden. It was so delicious.

Lunch! Homemade refried beans with Mexican rice, sweet onion lime slaw, and baked sweet potato.

Repost? Nope! Lunch! Similar to the burger from six days ago but with a slice of turkey bacon for this one. Homemade guacamole and bun. Served with a simple salad with lite Thousand Island dressing

Lunch! Cheesy spinach pasta with turkey, served with roasted seasoned vegetables on the side.

Lunch! Homemade "refried" beans with Mexican rice and sauteed garlic peppers with onions.

Lunch! A Beyond Burger with homemade guacamole on homemade bread. A spinach and tomato salad with spring onions and lite thousand island dressing.

Lunch! Homemade Peruvian arroz chaufa (fried rice).

Homemade banana nut bread. Had a slice while it was still warm. It's like eating a cloud that is light, sweet and tastes like bananas.

Lunch! Homemade refried beans and Mexican rice. It was amazing!

Dinner! My dad brought over some homemade chicken soup which was super delicious! I also got a chance to bake some buns this afternoon, so that was a nice addition to the soup.

Lunch! A "stir fry" type of dish with vegetables and tofu served over Parmesan cheese mashed potatoes. Quick, easy, and made with simple ingredients.

Dinner! Vegetable lentil soup. It's made with sauteed onions and celery, sliced carrots, diced potatoes, spaghetti noodles broken up into one inch pieces, lentils. Seasoned with garlic, ground cumin, ground turmeric, ground pepper, and a few bay leaves. Salt to taste.

Lunch! Guiso de Vegetales (vegetable stew) with garlic rice. Served with a piece of avocado and topped with homemade aji (salsa).

Dinner! Homemade pizza. Used turkey pepperoni and sweet peppers from Gwen's garden that I pickled.

Lunch! Beyond Burger with onions, homemade pickles, American cheese, mayonnaise and mustard. For the bun, I added everything bagel seasoning into the dough and a dash of ground turmeric for color. Served with air fried fries with mustard drizzled over them.

Homemade pies are on a different level. The reason why they taste so good is because you know the love that was put in them with each bite. This sweet potato pie came out so good!

Lunch! Homemade "refried" beans with seasoned rice and a corn tortilla quesadilla. Topped with salsa made using peppers from Gwen's garden. Does anyone else enjoy the burnt crispy parts of the rice from when it cooks in the pot?

Dinner! Homemade coconut chickpea curry over rice.

This cutie crossed the street this morning during our walk. It made it safely. I wonder if it's the same one from the other day.

Lunch! Made more of the Peruvian pesto pasta salad. Served with a salmon patty. It was super yummy.

Lunch! Lentils with diced potatoes, seasoned with curry powder, chili powder, cinnamon. Turmeric rice with onion powder, garlic, and a bay leaf. Topped with air fried tofu.

Lunch! Homemade black bean pasta salad with a Peruvian pesto and Parmesan dressing. Served with crispy crust salmon.
