This is ajoblanco with mango sorbet (not mine). Ajoblanco is a classic dish in Andalucia, a cold soup made with stale bread, garlic, almonds, olive oil, vinegar and water. A totally unlikely combination but one that is strangely addictive once your taste buds become familiar with it 🍽️🍜

Marmitako today: a potato, fresh white tuna and dry red pepper stew. Dry peppers are essential in traditional Basque cooking. Fresh red peppers are hung outside until they naturally dry - you can see most farm cottages now with strings of freshly harvested peppers in their wood balconies! 🍜🍽️
