Pickled red onions are ready! Ughh just what I craved. It cuts through the fattiness of that pulled pork. Down to my last frozen container. I have an idea of what to make with the remainder. Gonna make a salsa verde pulled pork pizza with Oaxaca cheese and pickled red onions. π½οΈ

If I close my eyes, it takes me home. I love breakfast. I don't get to eat it during the week because I'm usually rushed getting lunches ready for everybody. Saturday morning is a ritual. Coffee, breakfast, lo-fi jazz, eat by my window looking at the field. Brief moment of bliss. Good mornin. π½οΈ

We were given some turkey dark meat left overs from a friend who doesn't care for dark meat. I didn't quite know what to use them for. I mean, what do you use 2 cooked leg quarters for lol. Turkey and Lentil soup is where I ended up on. First time cooking lentils. They're pretty good! π½οΈ

First time adding beef to green spaghetti. I can't decide if I like this more than chicken or not. It definitely toned down the green with the added brown from the fond, but it's also beefy and it is playing better with the poblanos than the chicken does. π€ π½οΈ

As a Mexican American, I always find it crazy how some people try to gatekeep tacos. I've had both, and yes, the authentic tacos are delicious, but Tex Mex has it's own niche when done right. They're just different. Like comparing a smash burger to a regular burger. Similar, but different. π½οΈ

Hmm this was my first attempt at Green Bean casserole. It tastes good, but it's lacking that ROASTY flavor, know what I mean? How do I ramp up that flavor? This still very much tasted and felt like green beans. I used cream of mushroom base. Thinking sharp cheddar would have been better. π½οΈ

I just ... need y'all to understand how good these frozen chicken patties are lol. 6 mins, 450 degrees, air fryer, from frozen and add them at the beginning preheating. They feel freshly fried, and it blows my mind. They rival chicfila. Yeah, I said it. I brought the Lord's chicken in to it. π½οΈ

Green turkey chili on deck. Gonna leave it cooking over night so I can take it to work. It's actually spicy lol. Basically cooking it inside my salsa verde and added some northern and white beans. Gonna serve it with cilantro, scallions, red onions, avocado, and a drizzle of sour cream. π½οΈ

My caldo de res reflects my Mexican American influence lol. It's closer to an American beef stew, but it's got that caldo twang with the lime and cilantro. The broth body is thicker than a normal caldo as well. π½οΈ

I know y'all are probably tired of looking at tacos, but have y'all tried those "mixtas" tortillas? The half corn/half flour??? I've been sleeping on them forever. They're amazing! They fry like corn tortillas, but they remain pliable like flour. Crunchy edges, but soft middle. π½οΈ

Let's share food photo tips. When taking a food picture, I generally like to increase brightness, increase contrast, adjust black level to be darker, increase saturation, and then add a "pop" effect. I consider myself an amateur though. Any photography gurus have recommendations? π½οΈ

I've been practicing my homemade corn tortillas. I can get them to a soft flexible state when cooked, which is awesome since store bought are brittle and annoying. My problem is with frying them. I have the opposite problem. Mine then become brittle and fall apart. Advice? π½οΈ

I haven't posted much about weight loss lately. I'm still hovering in that 230-235 range because I keep enjoying food π . I still work out but I just haven't been watching calories. Stress eating is definitely a thing too. I use comfort meals to offset sucky days, and lately there's been a lot.
