I plan to talk about this more when I finish this theory, but I have this idea that the Knight (that is probably Dess/maybe Carol) plans to make a full coalition of Knights to bring about the Roaring, with Undyne being the next, and Toriel being planned as the final one. Toby mentions in the May Sweepstakes update Newsletter to be careful when getting the trophies, implying that turning off the game before you leave the room, and whatever conditions may happen to make you miss your Chapter End trophies are bugs in the trophy programming.
