My soapbox: this parking lot for over a decade, has been rented to the local children's hospital for a staff parking lot with shuttle service. It's right next to Federal wetlands where the beaver ponds are. Soon, this parking lot will be pickleball courts, right next to a sensitive environment 🤬

Beavers are smart. They practice good safety. Rather than completely felling large trees, they naw the trunk to the direction they wanted to fall in, then they use the wind to complete their job. Smaller trees, they do fail completely for food and building.

My morning walk was disrupted by a polar plunge and a foot race. It was far too crowded for me. Quieter around the beaver ponds. There seems to be a beaver building boom. This isn't a lodge, it's turning into a beaver empire and I like it.

This is the finished product, my peanut butter molasses cheesecake with chocolate peanut butter ganache on top. I think it turned out, it's firm, I could only taste the batter. Tastes as good as the batter did. Oh yeah, it's fully vegan & GF. Crust is ground up almond cookies, sugar, and Fritos!

It was eerily quiet around the beaver ponds.

Pre-sunrise before I raced to the next park.

I raced from Lake Washington today to Puget Sound to get an early pic of the Olympics. Not disappointed. Thankful for light traffic. I saw two beavers on the lake and one sea lion in the sound. Excellent morning.

My vegan cheesecake seems to have turned out, time will tell. I made it peanut butter and molasses with all plant based ingredients. The crust was made with vegan GF almond cookies and a lot of Fritos, it's sweet and salty. I make my cheesecake crust compliment the cake's flavors. High hopes.

I should have bought a couple of these filets. Wild caught coho salmon frozen at sea. It was cold today, perfect for smoking fish. The smoker stayed cool so I could smoke it longer, about 5 hours. It smells so good with apple wood for smoke. Yay! Yum!

Woohoo! It was great having the hubs off for five days. But, I need my kitchen time. I have a lot of paperwork to do so I planned ahead. I dry brined a salmon fillet yesterday, it's in the smoker. I'm making a vegan cheesecake today, just experimenting. I'm making a Frito and cookie crust. We'll see

Heck yeah! Sausage, potatoes, and football! This is Swedish potato sausage, stir fry cabbage and onion, and a particularly flavorful sweet potato. This potato is what I want in a sweet potato pie, flavorful and dry. Come on BEARS!!! Take care of the 49'ers!

This is the Italian Panforte I made a couple of weeks ago to hand out his Christmas gifts. Today. I finally got to cut into one. Just one of the small sample ones.
