Final stage, the jars were left overnight upside down to insure that every trace of “moisture” is removed, I then fill the jars with olive oil, the good stuff. Now wait for 10-15 days before we can taste.

Makdous, stuffed with chopped pecans (traditionally it’s walnuts but I hate walnuts, so I use pecan), red bell pepper, Calabrian chili pepper for the heat, garlic and olive oil. Stuff the eggplants and place them in jar. Turn jars upside down overnight.

Starting a batch of makdous, I boiled tiny Indian eggplants for about 10 minutes, cut open one side and added about 1/4 tsp kosher salt. I’m now weighing them down to extract all the liquid from them. I’ll be back with the rest of the steps in 48 hrs….

Lunch today, hamburgers, plain for the brother, buffalo style for me, I stuffed the patty with Gorgonzola cheese and loaded the bun with buffalo wing sauce, blue cheese dressing, heirloom tomato and onion…

Dinner, ribeye steak (cut from a rib roast that was on sale last Christmas), baked potatoes and broccolini….

Lunch today, one pan chicken thighs and drumsticks with baby golds, cherry tomatoes, a medley of peppers, olive tapenade, sun dried tomato pesto, thyme, white wine and chicken stock…served with couscous….

Dinner tonight, seafood gumbo, rockfish and two types of shrimp, red Argentinian and jumbo white (I didn’t have my usual seafood medley available), andouille sausage, and the trinity….my roux is usually blonde, so the sauce is a lighter color. And I don’t like okra in my gumbo….
