Lunch today - koosa bi laban (stuffed Italian squash in a yogurt sauce), the squash is stuffed with ground beef then cooked in the yogurt sauce. Served with vermicelli pilaf.

Heavy lunch today, so it’s a Mexican shrimp salad for dinner, with, of course, shrimp (precooked), tomato, cucumber, jalapeno, red onion, and avocado, simple lime juice and salt dressing

Lunch today, my favorite for hot summer days, larb aka nam sod aka lettuce wraps, I make this with ground turkey meat on the side I made a Thai cucumber dipping sauce, ajaad….

Lunch today, New York strip steak with corn on the cob and “baked” potatoes, I cut Yukon golds in half, brushed them all over with duck fat, salt and pepper and laid them cut side down on parchment paper, 425°F about 40 minutes, turned them over and sprinkled a couple with Parmesan….

Lunch today, roasted Cornish hens. I roasted them over baby potatoes so the potatoes soaked up all the goodness….simple spices today, salt, pepper, thyme and paprika, I added Parmesan to the potatoes. And a romaine, tomato, cucumber salad.

Starting my first batch of summer pickles, cabbage, cauliflower, sun choke (Jerusalem artichoke), carrots, baby cucumbers, garlic, I throw in some Thai chilies for heat, salt and turmeric. It’s fermented pickles, I will use picking juice from pepperoncini pickles that I save.

It’s a dog kind of day today….
