Lunch today, braised chicken in a white wine tomato sauce, yellow peppers, onions, garlic, cremini mushrooms, grape tomatoes, Calabrian chili sauce, olives…served with couscous…

Some people will call this chicken cacciatore because of the mushrooms, some will call it Calabrian chicken because it has Calabrian chili, others will call it basque chicken because of the peppers and olives…I call it braised chicken with a lot of good stuff…

Dinner, onion soup, four kinds of of onions, red wine, beef stock and I used balsamic vinegar and Worcestershire sauce for the acidic element, toasted ciabatta bread and lots of grated Gruyère and emmentaler cheese…..

As far as I know there is only one bad thing about onion soup….chopping the onions…😭. I use one sweet onion, yellow onions, one red one and a few shallots…
