I've cooked for 35+ years and 95% of the time I use a $12 Chinese style cleaver with a utility edge to cook. It's perfectly good for most cooking tasks and safer than expensive and overly sharp blades IMO. If you're comfortable with homestyle cuts there's no reason to risk a finger IMHO.
