Trying to recreate Schwartz’s Deli Montréal Smoked Meat here in The states. 10 day dry cure, 8 hr smoke over maple hardwood and rest. Fridge overnight then steam till 197F to finish. Slice and serve. Pains me I have to wait. Stay tuned, eh!

Rode the Natches trail jeep run on the #ktm890adventurer today. Settlers in the 1800s cut this trail to cross these mountains. I learned a LOT picking lines on deep jeep ruts and exposed tree roots. Holy sh*t. Keep momentum, pick you line and send it!
